This recipe is easy, nutritious, and delicious. Need I say more? I am always looking for these kind of recipes so if you have any, SEND ‘EM MY WAY! I don’t know where I got this recipe from but it’s become a family favourite and I have even served it to guests(and yes, they enjoyed it!).
1 T olive oil
1 chopped onion
3 cloves chopped garlic
1 butternut squash, peeled and cubed
1 1/2 t coriander and curry, each
1 can diced tomatoes
1 can chickpeas
1/4 c raisins
1/2 c water
1/4 c chopped cilantro
1. Heat oil in large pot, add onion and garlic and cook, stirring, for 7 minutes(or however long you want really)
2. Add squash and spices, stirring to coat. Add everything else except cilantro. Stir and bring to a boil over medium heat. Simmer 20 minutes.
DONE! Serve with rice, or quinoa, or couscous… your choice.
I also tried this delicious salmon salad recipe the other day and it was a success.
