Moroccan Red Lentil Soup

My friend Cobi shared this recipe with me last week.  It’s awesome!  Delicious and nutritious!


2 T olive oil

2 onions, chopped

4 cloves garlic, minced

2 celery stalks, chopped

1 tsp tumeric

1 tsp cumin

1/2 tsp ground coriander

1 tsp cinnamon

1 tsp fresh ginger

6 c. stock

1 c. dried red lentils

1 T tomato paste

1 can diced tomatoes

1 zucchini, chopped(I didn’t have zucchini so I used broccoli)

1 (sweet) potato, chopped

salt and pepper to taste


Cook onions, garlic, ginger and celery in oil until softened(5 mins)

Add spices, stir, and cook for 2 mins

Add everything else, bring to a boil.  Reduce heat, cover and simmer 35 minutes.


I should’ve taken a picture… I will next time.  This is a very flavourful meal, I enjoyed it very much.
