Warm Indonesian Rice Salad
What’s for dinner tonight: Warm Indonesian Rice Salad. It came from a vegetarian cookbook I took out of the library a while ago. As you can see, we ate it as a side dish, but I like it as a main course as well.
Ingredients:
1 1/2 c. brown rice
14 oz can pineapple tidbits
1 bunch scallions(green onions)
1 red bell pepper, chopped
2 c. bean sprouts
3/4 c. dry roasted peanuts
4 oz radishes, sliced
Dressing:
2 tbsp peanut butter
2 tbsp wine vinegar
2 tbsp light soy sauce
1 tbsp oil
2 tsp honey
1 tsp chili powder
1/2 tsp garlic
pepper
Directions:
Cook rice. Add ingredients and sauce when rice is finished, stir to combine. YOU ARE DONE!!


This looks so easy and delicious! Kristen tells me she has made vegetarian lasagna for us to eat tonight, she’s another adventurous soul like you….
Also you could totally be a photographer for a food magazine or cookbook, that looks so beautiful.
